Vegans, beware, this tofu, Asian salad is addicting! Even if you’re NOT a vegan, this healthy, delicious salad is chock full of flavor, nutrients and has just the right amount of crunch to satisfy any palate!
Tofu takes on a delicious HEALTHY, crisp when sauteed on the stove brushed with Mindy’s Yummy Sesame, Sesame Sauce. It’s so simple, easy and the results are magnificent!
I like to slice my tofu in 1/2 (horizontally) and drain it on a clean dish towel, pressing with my palm, slowly and carefully as to not crush or break the tofu. I flip it over and repeat this process until the tofu is very dry.
Then I simply brush the drained block of tofu with Mindy’s Yummy Sesame, Sesame Sauce, sprinkle with sesame seeds, a little salt, pepper & pan-fry (or grill) on medium-high heat for about 3-4 minutes or until brown. Flip over, brush with more sesame sauce, sprinkle with more sesame seeds, seasonings, and do the same. Remove from skillet and keep warm while you prepare the salad.
The salad recipe follows below. Simply put all of the ingredients in a large bowl and mix it with Mindy’s Yummy Sesame, Sesame Sauce.
Top this Asian, vegan salad with your pan-seared tofu block (or slice it up) and you’ve got an entire, healthy, vegan meal! I like to top it with one block because it makes a beautiful presentation.
This recipe serves about 3-4 people, can easily be doubled or tripled for parties, and is super easy. Adults, teens, & kids all love the flavor! Happy eating!
Tofu Asian VEGAN Salad
2 cups shredded cabbage
½ cup shredded carrots (optional)
1/2 cup chopped cilantro
1-2 sheets of torn nori seaweed
1/3 cup toasted almonds
1/2 block crunchy ramen noodles from soup packet, crushed
1/2 block of tofu, well-drained, & pan-seared on both sides
4 T. sesame seeds (optional)
salt and pepper to taste
