- 1 pound Yukon gold potatoes
- salt (to taste)
- 1/2 cup milk
- 2 Tablespoons unsalted butter
- 1 Tablespoon of Mindy’s Yummy Honey Mustard
- 1 pinch of ground nutmeg
- freshly ground black oepper (to taste)
Fill a large saucepan about halfway with water and bring to a simmer. Peel and slice your potatoes, then add them to the water. Add a few pinches of salt, then increase the heat and bring the water to a boil. Check your potatoes with a knife or fork. Continue to cook your potatoes until your potatoes are soft and can be comfortably cut. Drain the water using a colander then add your potatoes back into the pan adding your milk, butter, and nutmeg. Mash your potatoes until you have achieved your desired consistency. Stir in your honey mustard, and season with salt and pepper to taste.
